Round Room of Dublin’s Mansion House on Thursday May 22.

Sarah O'Sullivan's journey into the world of cookies began with a deep-rooted passion for the food industry. She pursued her master's degree in Food Insights & Innovation with Bord Bia through Maynooth University, where she demonstrated her
enthusiasm and commitment to the field.
During her studies, she completed a placement with Silver Hill Duck as a new product developer and later worked as a food and drink trends analyst with WGSN.
However, it was her love for cookies that ultimately inspired her to start her own business.
The inception of SOS Cookies was as simple as it was innovative. Sarah began by setting up an Instagram page to share her creations, and the response was overwhelmingly positive. Her soft, doughy cookies quickly gained a following, and it became clear that there was a market for her delicious treats.
SOS Cookies specialises in various iterations of the classic chocolate chip cookie, elevating them with popular chocolate bars like Kinder, Milkybar, and Dairy Milk. The brand also offers a range of deep dish cookies, brookies, cookie pies, and cookie cakes.
Today, SOS Cookies has grown into a national sensation. The company operates an e-commerce website that serves customers across Ireland and has a physical presence with three retail outlets in Dublin and one in Limerick.
Additionally, SOS Cookies supplies over 40 coffee shops in counties such as Limerick, Clare, Cork, Tipperary, Meath, Mayo, Westmeath, Offaly, Galway, and Kildare.
Looking to the future, SOS Cookies has ambitious plans for growth. The company aims to add bakery equipment to automate its processes, expand to 8–10 retail outlets nationwide, and increase its wholesale partnerships to over 120 cafes.
Strengthening the e-commerce site and growing corporate gifting to account for 10% of revenue are also key goals.
Sustainability is a priority, with initiatives like renewing their Origin Green certification, reducing cardboard through a crate return scheme, and offering reusable totes and tins for customers. Additionally, kitchen optimisation efforts are focused on using electricity efficiently.
