Two internationally trained head chefs are joining forces for one exceptional evening of food and whiskey, bringing together French precision and European flair for a carefully curated pairing experience at Fordes Courtyard.
On the 26th of February, guests will gather for a multi-course Redbreast Whiskey and Dinner pairing evening, as part of the Twilight Thursday series at Fordes Courtyard, Little Ellen Street.
The evening will showcase five delicious Redbreast expressions and a five-course menu meticulously designed by Frederic Duarte, head chef of The Old Quarter, and Patryk Bielawski, head chef at Fordes Courtyard, where the event will take place.
Together, they’ve crafted a menu that promises bold flavors, thoughtful pairings, and a celebration of craftsmanship from kitchen to glass.
Hailing from France, Frederic “Freddie” Duarte has been a chef for over 35 years, bringing refined French culinary tradition to every plate. He has been cooking in Ireland since 2002, and is the current Head Chef at The Old Quarter Pub & Townhouse where he continues to share his expertise and passion for flavour, and high-quality ingredients in every dish.
Originally from Poland, Patryk brings passion, precision, and creativity to every dish. With over 22 years of experience in professional kitchens across 3 European countries, Patryk has developed a style that blends classical European techniques with bold, modern flavours.
Rather than dividing the menu strictly, the two chefs worked closely to build a seamless progression of courses. Each dish has been designed alongside its paired whiskey, considering not just flavor but mouthfeel, aroma, and finish.
The result is more than a dinner. It’s an experience designed to slow guests down, encourage conversation, and highlight the relationship between food and fine whiskey.
The experience promises to shine just as brightly outside the kitchen. The experience will be led by Matthew Smyth, Prestige Brand Ambassador for Irish Distillers, who will guide guests through each pairing with expert narration, insight, and storytelling.
Attendees will also be among the first to experience Redbreast Moscatel, the newest addition to the celebrated Redbreast collection, making the evening not just a dinner, but a special moment for whiskey enthusiasts.
With limited tickets available, the upcoming Redbreast Whiskey & Dinner Pairing Night at Fordes Courtyard is expected to attract both dedicated whiskey lovers and those new to the world of fine Irish spirits.
